“Chef And The Sea” w/ Chef Ludo Lefebvre, Mark Healey, Stephanie Gilmore and Reef McIntosh

When we heard that celebrity chef Ludo Lefebvre would be hosting a pop-up restaurant in Hawaii featuring local flavors we thought who better than big wave charger and champion spearfisherman Mark Healey to catch the ingredients. As word spread about the project, fellow foodies 5x World Champ Steph Gilmore and Pipeline charger Reef McIntosh jumped on-board giving Ludo a solid crew to accompany him around the Big Island’s North Kona Coast in search of Lobster, Crab, Uku and other local fish to be prepared, cooked and enjoyed.

“He incorporated everything that happened during the whole journey to get the ingredients, so not only was it things that worked with the flavor of the ingredients he cooked but it told the story of our trip,“ said Mark Healey. The results were amazing delicacies prepared by Chef Ludo with assistance provided by Mark, Steph and Reef.

Chef Ludo was kind enough to share the recipes he created with the crew at the Four Seasons Resort Hualalai. Download each below and try your hand at making these in your own home.

Chimney Spiny Lobster with Roasted Pineapple and Mint

Kona Crab with Cabbage and Kimchi Butter Tacos

Uku in Crust of Salt with Vierge Sauce

Sautéed Opihi with Escargot Butter

The crew welcoming Chef Ludo with some Opelu cooked over mesquite wood.

Mark searched every nook for fresh ingredients.

Some of the local ingredients that Ludo cooked with that Mark Healey and the crew caught.

It wasn't all fishing and cooking, Steph and Ludo having a laugh.

Uku cooked to perfection.
